KATE HUDSON, FABLETICS, AND WORKING OUT TO A DVD


Who in the world loves new workout clothes AND packages arriving in the mail?!?!  This girl!  I love the excitement of new workout clothes to keep me motivated (and attempting to look somewhat cute while I sweat it out).  I know, I know, I am working out so who cares, right?!  Well, the answer is I do.  I just love the feel of new workout clothes, the bright colors, and the overall comfort & coziness.  I also don’t feel so bad when I run errands in my yoga pants if they are cute.  Okay.  Let’s be honest for a second.  I don’t just run an occasional errand in my workout clothes, I secretly live in them!!!  All the more reason to keep them stylish and fun, at least that’s what I tell myself! J

Though I love to shop and pick out new workout gear, this can be a bit more of a challenge living in Erie than what I am used to in the past. SOO I have become pretty good at online shopping, at least that’s what my husband says! EEEEK! Welllll, Kate Hudson (huge fan!) has made my love for shopping and new workout clothes super easy by inventing FABLETICS!  She created a super cute workout clothing line, and it is genius! You pick out a new outfit and it ships right to your door every month!  The clothes are fun, bright, cute, stylish, and most importantly good quality!  In a recent interview by People magazine Kate Hudson said, “I’m a DVD girl, I always go back to the Brazilian Butt lift DVD, which is really fun and a good workout for when you’re traveling. You can follow the program. Even if you are a mom, and you have a million things to do and the kids are at school, I love the DVDs. They make it hard to say you didn’t have the time.”  

I couldn’t agree more, I love the DVDs!   I am going to be honest though, I have not always felt this way.  In the past I thought, really, how in the world can someone get a good workout with a DVD!  Then, I tried Insanity, and BOY WAS I WRONG!  I have toned muscles I never even knew I had, thanks to Beachbody.  I have NEVER had better workouts in my life than I do from some of these DVD workout programs.  If you follow the program, which is spelled out for you, results are guaranteed!!! Pork Tenderloin with Pan Sauce

I found this recipe on Pinterest, and lightened it up a little bit!  We have made it on many occasions, and it is always a big hit!  Great way to prepare pork when you are looking for a healthier comfort mealJ


Ingredients:
4 tblsp of olive oil
1
3 cup soy sauce
1
4 cup red wine vinegar
Juice of 1 lemon
1-2 tbsp fresh parsley, finely chopped
2 tsp dry mustard
Freshly cracked black pepper, to taste
4 cloves garlic, peeled and minced
1 1-lb. pork tenderloin

Pan Sauce:
Pan scrapings from pork tenderloin (save  pan after browning meat)
1/2 cup of chicken broth
3 tbsp of reserved marinade (thoroughly mixed)

1. Combine olive oil, soy sauce, vinegar, lemon juice, parsley, mustard, pepper and garlic. 

2. Reserve 3 tblsp of marinade for pan sauce before you add pork.

3. Place pork in zip lock bag with marinade and let sit for at least 4 hours.  I marinade overnight for best results.

4. Sear pork tenderloin until all sides are browned in pan on stove.

5. Bake at 350 in the oven for 30-40 minutes or until meat has reached 160 degrees.

6. Let tenderloin rest for 5-10 minutes before slicing.

7. PAN SAUCE- Using skillet that you used to brown meat, add ½ cup of low sodium chicken broth , scraping all drippings from pan.  Add 3 tablespoons of reserved marinade and simmer for 5 minutes.  Pour over sliced pork.  Enjoy!

Guacamole

guacamole is a family favorite in this house!  i can honestly put it on almost anything... it goes right along with my mexican food addiction!


ingredients
2 avocados
chopped red onion
1 lime
Pinch of sea salt
fresh diced tomato


cilantro
directions
mash avocado
 add onion, salt, cilantro, tomato, and juice from 1 lime…ENJOY!

Healthy Pork Carnitas


One of my all time favorite foods is Mexican, but we all know Mexican food is not on the light side by any means!  I will often avoid it all together or try to tweak recipes to make them healthier, but I have to admit it is just not the same!  This is a recipe I found on Melanie Mitro’s blog (currently #1 Beachbody coach) and hands down, by far my favorite healthy Mexican recipe I have made yet!  Better yet, it is 21 day fix approved for all my challengers!  Happy Cinco De Mayo!

 


 

Ingredients:

  • 3 lbs of Pork Loin
  • 1 bay leaf
  • 1  1/2 cup of water  

To make the rub combine:

  • 2 tbsp of chili powder
  • 2 tsp of cumin
  • 1 tsp of ground coriander
  • 1/2 tsp cloves
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp oregano
Directions:

Mix all spices together except the bay leaf in a bowl.
Rub down the entire pork loin with the spices and place in your slow cooker.
Add the bay leaf and water and cook on low for 6-8 hours.  Keep an eye on the pork just to make sure the water doesn't absorb and it dries out.  If you have to add more liquid please do.
Your pork should pull apart easily so you can shred it.

Once you it is able to be shredded take it from the crock pot, shred and then place back into the crock pot.  Stir the meat to coat with the juices.

You can fill a red container with this for the 21 day fix!

For the Carnitas you will need:


  • Corn Tortillas
  • Black or Pinto Beans in a can
  • Romain Lettuce
  • Diced Tomatoes
  • Diced Avocado
  • Shredded cheddar cheese

Cilantro Lime Topping (Do not omit this, it is what makes the whole thing just amazing)

  • Greek yogurt
  • 1/4 Cup Fresh Lime Juice
  • 1/4 Cup Fresh Cilantro Chopped
  • 1 lime cut into wedges for garnish

Combine these ingredients in a bowl for the dressing and set aside.

Add the drained beans with 1/2 of a cup of water to a pot on the stove over medium heat. Cook until heated through.  Gently mash with a fork until they reach your desired consistency.

Lightly spray your corn tortillas with cooking spray and place on a foil lined baking sheet.
Crisp in the oven on 350 degrees for 8-10 minutes until desired crispiness.

Next step is to assemble the goods!

So take your corn tortilla and add your fixings to make yourself a pretty sweet Carnita.
Add a dollup of the dressing on top and enjoy!

Measure out a red, a yellow, a green and a blue for this recipe!
Your beans and tortilla are your yellow.
Your cheese is your blue.
Tomatoes and lettuce are your green.
Pork is your red.
